Mineral composition, omegas and lipid quality in the visceral fat residues of tambaqui (Colossoma macropomum Cuvier, 1818)

This study aimed to determine the mineral composition, fatty acid profile, omegas and lipid quality indexes in visceral fat residues of tambaqui (C. macropomum). Three pieces were collected from 20 fish weighing 1.10 ± 0.10 kg, which homogenized sent for compositional analysis. Minerals determined by AOAC Official method 969.23 968.08. The acids grouped calculate ∑PUFAs/∑SFAs ratio proportion polyunsaturated ∑PUFAs (n-6/n-3), atherogenicity indixes (AI) calculated, thrombogenicity (TI), between hypocholesterolemic hypercholesterolemic (HH). Mineral elements found, 0.68 0.015 mg/100g total iron, 159.16 14.32 Na+, 63.90 5.11 K+, 10.28 0. 62 Ca2+and 7.31 0.58 Mg2+. As acids, 40.10% SFAs, 38.10% MUFAs 21.80% PUFAs. calculations indicated significant values omegas, 3, 6, 7 n-7. There ratios 1.84 ∑PUFAs(n-6/n-3) 6.22, with an AI 0.50 a TI 0.93 HH 2.16. 1.0 kg can be evaluated as having high nutritional value, addition being viable option oil extraction inclusion animal feed.
